Beer Glazed Pork
Chops
4 boneless pork top loin chips cut about 1 1/4 in thick
1 12-ounce bottle of your favorite beer
1/4 cup honey mustard
3 cloves garlic, minced or 1 1/2 tsp. bottled minced garlic
1 teaspoon caraway seeds
Trim any excess fat from chops. Place chops in a resealable plastic bag and put into a shallow baking dish or
bowl.
Marinade: Mix together beer, honey mustard, garlic, and caraway seeds. Pour mixture into the bag with the chops.
Seal bag. Turn to coat. Place dish into refrigerator for 6 to 24 hours. Overnight is best. Turn the bag
occassionally to fully coat the pork chops.
Drain: Pour marinade into small saucepan on stove. Heat to boiling. reduce heat, cover and simmer for about
15 minutes or until marinade is reduced by about half. Set aside.
Grill: For a gas grill, preheat grill to medium heat. Adjust for indirect cooking so pork chops are not seared.
Grill for 30 to 35 minutes. Brush chops frequently with marinade sauce during final 10 minutes of
grilling. Discard remaining marinade.
Serve with rice or garlic mashed potatoes and green vegetables.
