Cherry Cheesecake
1 8oz. bar of softened Cream Cheese (low-fat works good too)
1/2 C. sugar
1 egg
1 tsp. vanilla
1 C. sour cream (use low fat as an option)
9-inch graham cracker crumb pie crust
1 can Cherry Pie Filling (can substitute with other fruit toppings)
In medium bowl, combine cream cheese, sugar, egg, and vanilla until smooth. Stir in sour cream.
Cook in microwave at medium for 3 and 1/2 to 4 minutes. Stir twice. Pour cheese mixture into pie crust. Cook at
medium-low 5 to 7 minutes, or until center is almost set. Chill 3 hours or overnight. Top with fruit.
For crust, if making your own:
1/3 C. butter
1/4 C. sugar
1 and 1/4 C. graham cracker crumbs
Heat butter and sugar. Add crumbs and cook in microwave at medium for 3 and 1/2 minutes. Pour in
cheesecake and chill.
Top with cherry pie filling, fruit of your choice, or leave cheesecake plain. Serve cold.
