Honey Pecan Chicken
(Makes 4 servings)
4 Chicken Breasts (Boneless and Skinless)
1 Cup Flour
1 Cup Buttermilk
1/3 Stick of Butter
1/2 Cup Honey
1/4 Cup Finely Chopped Pecans
Chicken:
Preheat skillet to 400. Dip each chicken breast in buttermilk. Bread the chicken breasts in flour seasoned with
salt and pepper. Fry in oil until done. Set aside in a 9 X 13 dish.
Sauce:
In a small pan on the stove, melt the butter. Add honey while continuing to stir. Disolve to taste by making
sure it isn't too sweet or greasy, and adjust accordingly. Let bubble for a few minutes. Add pecans. Stir until it
bubbles a little longer. Take care not to overcook the sauce. Use a spoon to dribble the sauce over the
chicken breasts.
Serve while hot with rice or stuffing.
