Spiced Shrimp with
Spinach
12 ounces fresh or frozen peeled medium shrimp (deveined)
1 1/2 teaspoons jamaican jerk seasoning
2 tablespoons olive oil
3 cloves garlic, minced (or 1 1/2 tsp bottled minced garlic)
8 cups torn fresh spinach
Thaw shrimp if frozen and rinse. Pat dry with paper towels. Place shrimp in a small bowl. Sprinkle shrimp with
jerk seasoning and toss. Set shrimp aside.
In a large skillet, heat 1 tablespoon olive oil on medium-high heat. Add garlic and cook for 15 to 30 seconds.
Add half of the spinach. Cook and stir about 1 minute or until spinach is wilted. Transfer to a serving platter.
Cook remaining spinach the same way. Cover to keep warm.
Add remaining oil to skillet. Add shrimp. Cook and stir for 2 to 3 minutes or until shrimp are thick and no
longer clear. Serve shrimp over wilted spinach.
Serve with rice or garlic mashed potatoes for a great meal!
